Breakfast in a Mug!

- CHEESE OMELETTE IN A MUG:
            2 Eggs
            1 Tbsp of ham, optional
            1 Tbsp of salsa, optional
            1 Tbsp shredded cheese
            olive oil or cooking spray
            salt and pepper
            mug

Directions:
1.         Coat your mug with olive oil or cooking spray.
2.         Add eggs to mug and whisk together with a fork
3.         Add ham, salsa, cheese, salt and pepper.  Whisk till all ingredients are completely mixed together.
4.         Microwave on high for one minute.  Stir and break up any large chunks of egg. 
5.         Cook for another 45 to 60 seconds or until eggs are set. 
Enjoy!

FRENCH TOAST IN A MUG:

1 slice bread, your choice
1 egg
1/4 cup milk
1/2 teaspoon cinnamon
1 1/2 tablespoons maple syrup
Pinch salt
1/2 tablespoon unsalted butter, at room temp
Chocolate chips or walnuts, optional for toppings

Directions:

Whisk together the egg, milk, maple syrup, cinnamon and a pinch of salt in a large mug until combined.
spread the butter on one side of the bread. Cut the bread into bite-size pieces and add them to the mug, pressing down lightly so all the bread is submerged. Sprinkle with the chocolate chips or walnuts.
Microwave on high for 2 minutes. Check on after 1 minute. Let cool for about 1 minute before serving. Add additional syrup if desired.

CHOCOLATE AND SALTED CARAMEL CAKE IN A MUG:

4 tablespoons all purpose flour
4 tablespoons sugar
3 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg - beaten
3 tablespoons skim milk
1 tablespoon vegetable oil
2 salted caramels

Directions:
In large mug add: flour, sugar, cocoa, baking powder, salt, egg, milk, and vegetable oil. Mix to combine. Drop caramels into center of mixture one at a time. Mirowave 1 minute and 30 seconds check if still gooey add an additional 30 second
Mixed berry crisp in a mug
2 tablespoons quick oats
2 tablespoons light brown sugar
2 tablespoons mixed nuts, or nut of choice
1 tablespoon all purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon cold unsalted butter
2/4 cups mixed frozen berries
Plain or flavored Greek yogurt, optional for serving
Directions:
Combine the oats, sugar, nuts, flour and cinnamon in a large mug. Using a fork, cut in the butter until the texture becomes crumbly. Place the berries on top of the crumble mixture and microwave on high power for 2 minutes, until the fruit starts to bubble and slightly thicken. Stir to bring the crumble to the surface and serve with a dollop of yogurt on top.
