Dark Chocolate Truffles
- 1 pt. heavy cream
- 2 Tbsp. light corn syrup
- 20 oz. bittersweet chocolate
- 5 Tbsp. butter, softened
1. Boil heavy cream and corn syrup.
2. Pour over chopped chocolate.
3. Stir until completely melted.
4. Let this mixture cool to 100 degrees F.
5. Add softened butter.
6. Let stand until completely cool.
7. Scoop into small balls.
8. Roll with cocoa dusted hands.
9. Let sit and crust over for 30 min.
10. Enrobe in chocolate.
